In the heart of historic Cottleville, nestled along Oak Street, a whimsical willow tree stretches 35 feet across the wall, hand-painted and full of character, just like the café it calls home. Pink Willow Café, a locally owned and lovingly crafted brunch spot, has quickly become a beloved gathering place for residents and visitors alike since opening its doors in March 2024.

Founded by Terry and Allison Tonsing, Pink Willow Café is more than just a coffee shop or brunch destination—it’s an experience. With chef-prepared, seasonal dishes, handcrafted espresso drinks, and boozy brunch staples like mimosa flights and cold brew cocktails, the café strikes a unique balance between elevated flavors and a welcoming, family-friendly vibe.

“Every detail reflects our passion for great food, great drinks, and the community we cherish,” says Allison.

That commitment to community runs deep. Originally from Memphis, TN, Terry and his family fell in love with Cottleville when they moved to the area seven years ago. Drawn by its charm, warmth, and close-knit feel, they envisioned a brunch space that would reflect the town’s personality: playful, inclusive, and full of heart.

“When the opportunity arose to establish Pink Willow Café next to the historic Oak Street Inn & Lounge, it felt like the perfect fit,” Allison shared. “Opening here wasn’t just a business decision, it was a commitment to creating something meaningful for the community that welcomed us so wholeheartedly.”

From their signature strawberry cheesecake French toast to scratch-made biscuits and gravy, the food is fresh, fun, and crafted with intention. But the space itself, anchored by that striking willow tree mural and local community artwork, tells a story of connection. It’s a space where parents can enjoy a latté while their kids color or where friends can toast to a weekend well spent.

Being an active member of the Cottleville - Weldon Spring Chamber of Commerce has been a key part of Pink Willow’s journey. “The Chamber, led by Wendy Berry, has been an invaluable partner, offering guidance, networking opportunities, and a true spirit of collaboration,” says Tonsing. “If you’re starting a business here, my advice is simple: join your Chamber and get involved.”

That involvement extends beyond business networking. Pink Willow Café proudly supports local nonprofits and schools and is already stepping into a sponsorship role for the Post Race Party at the inaugural Witches in Cottleville Run Witch Run 5K this October. Giving back, Allison says, isn’t just good business—it’s a core value.

As for what’s next? The team at Pink Willow Café is focused on continuing to nurture their unique space while exploring possibilities for growth. “We’re open to expansion, but we’ll never lose the heart of who we are,” Tonsing affirms. “Whatever comes next, it will be rooted in creativity, care, and connection.”
