For owner/operator Mike Grillo, that’s the point: to create a true hometown market that celebrates both quality and community.

“We’re a fresh meat market carrying Certified Hereford Beef, which we believe is a superior product compared to Black Angus,” Grillo explains. “We make our own brats, burgers, and sides in-house, and we’re happy to handle any special order. Supporting local is really important to us, so you’ll see products from other St. Louis companies all over our store.”

The community has noticed. Since opening in September 2020, Grillo’s has become a go-to for premium cuts like Filets, Ribeyes, and Brisket Burgers, along with their customizable “Butcher Bundles” that let families stock up on exactly what they’ll use.

A Local Business with Deep Local Ties

Grillo is no stranger to St. Charles County—he grew up in St. Peters and has spent his life in the area. When it came time to open a business, staying close to home was a natural choice.

“My family and I live just two miles from our location,” he says. “We wanted to be here because of all the new homes and the growing population. It felt like the right spot to build something local.”

That choice has paid off. The City of Lake St. Louis and St. Charles County have been strong partners from the start, helping Grillo navigate the challenges of being a first-time business owner.

“Everyone has been helpful in answering questions and problem-solving issues I didn’t even know would come up,” he says.

“There’s a huge amount of community support here,” he says. “People really want to help small, family-owned businesses succeed.”

Looking Ahead

Grillo’s Chop & Barrel will celebrate its five-year anniversary this fall, but Mike is already looking toward the future. He recently expanded his entrepreneurial footprint with the launch of Birdies and Barrels Golf Lounge, a private membership-only simulator golf lounge located right next door, the only one of its kind in St. Charles County.

As for Grillo’s Chop & Barrel, Mike envisions steady growth and possibly a second location within the next few years.

“We want to keep expanding what we can offer, while keeping that same small footprint and local feel,” he says.

“The schools are great, there’s so much growth, and the parks and amenities make it a great place to live and work,” he says. “If someone asked me about starting a business here, I’d tell them 100% yes. Look toward the growing areas with new homes. People new to the area always find us.”
